2 egg whites
pinch of salt
1 can condensed milk
1 tablespoon vanilla
2 bags coconut (14oz each)
Preheat oven to 300*
Whisk the egg whites and the salt. I used my fabulous kitchen aide with the whisk attachment and since this takes a couple of minutes, I did the dishes while the machine did all the whisking work. Essentially, you want to get them overly frothy and merangue like. This is the key to preventing chipped teeth while eating these.
Check the eggs. Still not frothy so go feed the dog.
Finally frothy, add the vanilla and condensed milk.
Let all of this mix for a minute of two while you try to get your dog to remember how to "sit".
Stop the mixer (super important step here, folks) and removed the bowl. Add the coconut and using a rubber spatula. If you think you're done mixing, you're not. Keep mixing.
Using a teaspoon, glop this shit onto parchment lined cookie sheets into 1 inch mounds about an inch apart from eachother. Don't bother trying to use your hands as it will just make a big huge mess. Bake for 18-22 minutes or until golden brown. During that 18-22 minutes, fetilize your garden, turn your compost pile, water your roses, write a blog, or do the hokey pokey and turn yourself around.
The above recipe makes 6-8 dozen of these suckers so you're going to have a lot of 20 minute spans to get other stuff done.
When each batch is golden brown, cool on a rack while the next batch bakes.
See it's super duper easy to impress the brothers of your boyfriend!
